On Wednesday we had another butchering class. A farmer donated a pig that came to us in jungle camp already killed, gutted, and government inspected. Everyone who was interested came to see how to skin the pig and cut up the pork. A good amount of the pork went into making "farmer sausage" which is a smoked sausage. There was good student participation and most of us went away in great anticipation of our big baroque in the evening.
